If I move a ship against a planet on my turn and the owner of said planet discards his planet does it destroy my ship as well? If not, what happens to my ship once his planet is discarded?

No, your ship is moved back to your fleet because it no longer has a target to move against.

 | You ship isn't played to his terrain, so him discarding the terrain only discards his terrain.
Now, if a police ship or base were in play on that terrain, they would also be discarded.

          - When a ship is moved to a terrain with a ship of equal or lower strength played against it, the ship played against the terrain is moved off of the terrain. The ship moved off the terrain does not protect its Sector HQ until it is moved back to a location where it can do so.

The ship justs floats in space (it is NOT discarded with the terrain), until your next turn where you can move it again.

location is discarded. any opinions on this interpretation?

So a ship would not be discarded (even a police ship).
Most bases would be discarded (aqaaran?)
Crew would be discarded (unless they were an automaton).

BTW, when a card is played or moved against a location, it is part of the
 location stack.

Eh, wrong. When a ship moves AGAINST a terrain, to steal or whatever, it is not played to the terrain, and thus isn't part of the location stack.
Ships, crew and bases that are in play, played to the location, are discarded with the location. Note: Police ships, like tugs & freighters, are played to the terrain also.

It is in play AGAINST the terrain, and therefore part of the terrain stack. Just like any other card played against that terrain. Yes, you can play a Frayed Time Spindle to it.

Yes, but they are not discarded with the terrain. They can exist independantly, therefore do. :)
